Split the skins of 4 good-quality pork sausages and squeeze out the meat into large mixing bowl(Sausage Meat is optional)
Add 500grams of mince beef, ½ finely chopped onion, ½ large bunch flat-leaf parsley, 50g grated parmesan, 50g fresh breadcrumbs, 1 beaten eggs and lots of seasoning. Get your hands in and mix together really well – the more you squeeze and mash the mince, the more tender the meatballs will be.
Heat oven to 220C/200C fan/gas 7.
Roll the mince mixture into about 25 golf-ball-size meatballs. Set aside any meatballs for freezing, allowing about 5 per portion, then spread the rest out in a large roasting tray – the meatballs will brown better if spaced out a bit.
Drizzle with a little oil (about 1 tsp per portion), shake to coat, then roast for 20-30 minutes until browned.
Once meatballs are done, pour in the Caffrey’s Meatball sauce into a saucepan and heat. Then just add the meatballs to the sauce. Then leave to simmer whilst you make your spaghetti.
Once your spaghetti is ready, serve up portions of spaghetti on each plate and then add in your meatballs and sauce. Or else stir them all together and serve with extra parmesan.
Soaking meat, poultry or fish in a marinade helps to tenderise and flavour. Marinade overnight in the refrigerator if possible, the longer the meat/poultry/fish is marinated the more tender it becomes and the more flavour it takes from the marinade.
